It is very important to catch the crust to be tasty and juicy in the middle. If you can, cook them on the charcoal grill and they will be even tastier. Serve the burgers with potatoes, salad and any favorite sauces. I like it as such, without anything else. They are wonderful!

I'm a weather-addicted person. I have recipes that I love only during this period. My moods are sometimes like the weather outside. And the weather most often inspires me in what I cook. Colors from the garden, sun, rain or blizzards somehow end up being brought as a real decoration or as a metaphor.

The pears arrive in my dishes only in autumn. Then it seems to me that their scent brings to the tarts or cakes an extra taste, aroma and color.

If you find it strange to eat a pizza with pears, well you should notice that this fruit is joined by noble cheeses and prosciutto cotto. The combination is irresistible, it really deserves all the attention of those who want to try this pizza.

We love salted and finely chopped prosciutto. I don't know if everyone knows that there are big differences between raw and cotto. Prosciutto Cotto is a ham cooked by slow steaming, with a pink color and delicate aroma and is slightly moist. It goes very well in simple or complex sandwiches, but also in pizza, cooked in the oven.

Prosciutto Crudo is dry ham in the air, with a reddish color, intense aromas and pronounced taste and is suitable to be eaten as an appetizer, on plates, in salads or pasta. If we use prosciutto crudo for pizza, then it will be put on the counter ready to be baked, when it is taken out of the oven (I remind you of pizza with prosciutto and arugula).

I will not hold your attention and let you discover how to make pizza with pears, gorgonzola and proscitto cotto. And a little secret, which contributes to the perfection of taste: caramelized onions. A madness that is worth trying for you too!


For the countertop:

30 ml olive oil or sunflower oil

For topping:

80-100 g gorgonzola cheese

100-120 g cooked ham

We start with the preparation of the dough. Put flour with salt in a bowl. In the middle we make a hole, put the yeast and sugar, then pour the warm water. knead the dough a little, then incorporate the olive oil.

Knead the dough until it becomes smooth and does not stick to your hands, then leave it in a bowl covered with a towel until it doubles in volume.

I will tell you that I put a food foil directly on the dough, so that it does not crust.

While the dough is fermenting, we caramelize the onion.

Melt the butter in a thick-bottomed pan (the best is the cast iron one). Heat the julienned onion in melted butter until it starts to soften. Pour the water in 2 stages, letting it evaporate over low heat. During this time, stir from time to time, to make sure that the onion does not stick.

When the onion is soft and turns brown, add the balsamic vinegar cream and continue to cook the onion for another 3-4 minutes.

When the dough has risen, spread it so that it is the full size of the tray. It is best to spread by hand, but if we can't do it, use a rolling pin and let the dough rest for another 15 minutes. we put a very thin layer of tomato juice all over the counter.

Sprinkle with grated mozzarella, gorgonola cheese and parmesan. Cover the top with caramelized onions as evenly as possible.

Cut the pear in half, remove the back with seeds, then cut the thin slices (about 2 mm thick) and arrange them over the counter.

the last ingredient put on the pizza is prosciutto cotto cut or broken into strips.

Bake the pizza on the special program of its oven at 240 ° for 20-25 minutes.
