Recipe Preparation

Is it Pimm’s o’ clock yet? We’ve been waiting all year for the quintessential British summer drink to have its moment in the sun. A picnic basket essential, the gin-based spirit, is made by infusing gin with a secret combination of herbal botanicals, caramelised orange and warm spices. Here are some inventive Pimm’s cocktail recipes to keep you busy (and woozy) this summer…

How to make the perfect jug of Pimm's

Do you know how to make Pimm's properly? From the mint leaves and sliced strawberries to the ratio of Pimm's and lemonade, and how about a Pimm's Spritz? Here's everything you need to know about making the Summer cocktail.

Pimm's has become as synonymous with British Summertime as picnics in the park and barbecued burgers, but do you know how to make it properly?

The perfect Pimm's Recipe - Ingredients:

  • A highball glass
  • 50ml Pimm's No 1
  • 150ml lemonade
  • Fresh mint leaves
  • Chopped strawberries
  • Sliced orange
  • Chopped cucumber
  • Plenty of ice

The perfect Pimm's Recipe - method:

It's quite simple really, say mixologists at Pimm's. Fill your glass with ice, pop in the mint and chopped fruit, pour in the Pimm's, top with lemonade and stir.

To make up a pitcher use the same method, this time with a handful each of the chopped fruit, cucumber and mint leaves. Mix the quantity of cocktail you need, keeping the ratio to one part Pimm's and three parts lemonade.

Pimm's Recipe with a twist:

We spoke to bartenders and mixologists around the UK to find out how they enjoy a glass of Pimm's with a twist.

1.Pimm's Spritz

Take your Pimm's to the next level with a Pimm's No. 1 Spritz. In a wine glass filled with ice, add 50ml Pimm's No 1, followed by 75ml lemonade and 25ml sparkling wine. Garnish with fresh mint leaves and cucumber slices for a refreshing take on a classic.

2. Serve with champagne

Known as a 'royal cup,' or 'Pimm's Royale,' adding Champagne instead of lemonade is exactly what Jane Peyton, founder of School of Booze would do. However she recommends serving this concoction in a smaller glass because the alcohol level is higher.

3. Use different herbs

Don't feel as though you have to stick to just mint, Matt Ottley, Head Bartender at the Salt Room in Brighton tells us. Instead he recommends trying different herbs and muddled spices for a new flavour experience. His favourite for Pimm's are:

  • Basil, strawberry and black pepper
  • Sage, apricot and fennel
  • Rosemary, raspberry and pink peppercorns
  • Herbs like thyme and lemon balm

4. Add Appletiser

Richard Wood, Head of Spirit & Cocktail Development at the Duck and Waffle, says Appletiser goes brilliantly with Pimm's.

"It's a perfectly delicious alternative to lemonade," he said. "It&rsquos best mixed in a large wine glass with a couple of halved strawberries, a sprig of mint and a slice or two of apple. Garnish with an apple fan for a true taste of Summer with a lovely aromatic lift."

5. Top it off with cider

"My Pimm's with a twist would have to be gingerbread syrup, lemon juice and apple cider, all served in a big schooner glass," says Bar Soba mixologist Faye Woodcock.

6. Enjoy with some cherries

"Add cherry juice and some whole cherries themselves into the mix for a delicious twist to traditional Pimm's," says Sam Metcalf, Front of House Manager at Waitrose Cookery School. "I also suggest adding a shot of Disaronno to turn this cherry Pimm's into a punch!"

7. Add a drop of gin

"For years now, we've always added a touch of gin to our Pimm's to enhance its flavour," says Simon Gamble, Two Birds Spirits Creative Director.

"Dry gin gives the drink more personality, boosting the botanical flavours and giving it an aromatic flair while keeping to its British roots throughout the Summer season."

8. Turn them into ice lollies

Scott Stevens, chief mixologist at Bar Soba loves making Pimmsicles in the Summer. He adds all the classic ingredients and then freezes them for the perfect cool down on a hot day.

9. Throw elderflower cordial into the mix

"I love to serve Pimm's with sparkling elderflower cordial or liqueur, a slice of cucumber and a spring of mint," says Samantha Russell from The Cock and Bottle in Notting Hill.

10. Use whisky

If you're wanting to liven your Pimm's up a little, Grant Neave, Brand Ambassador for Monkey Shoulder recommends adding a measure or two of whisky.

"The citrus notes in Pimm&rsquos marry perfectly with whisky especially when it&rsquos mixed with ginger ale and a few slices of orange," he tells us. "To ramp up the spiciness replace the ginger ale with ginger beer for the perfect punchy Pimm&rsquos cocktail."

11. Change to tropical fruit

"To give a unique twist I switch the usual Summer fruit to some more tropical fruit," says Alex Rowland, bar manager at St Tudy Inn in North Cornwall. "I also like to add a splash of Pedro Ximenez Sherry giving the Pimm&rsquos a really delicious sweet sticky finish, or a measure of El Dorado Rum 15 year old which will give it a refined dry caramel finish.

The ultra-cool, low-octane tipple that's made for day drinking.

It's a classic cocktail that's legitimately old school. Europeans have been sipping on refreshing spritzes for over a century. The perfect aperitivo, the sparkling cocktails are a little bit sweet and a little bit herbaceous with a touch of effervescence. And since they're relatively low in alcohol, you can happily put back a few without getting yourself into trouble. Which is why it's become the drink of choice for many discerning gentlemen—particularly during summer. What's more, a spritz is one of the simplest drinks to make at home. They require limited ingredients and come together in a snap. Which is good because they tend to go down fast. Here are three riffs on the spritz to start mixing up immediately.

The OG of spritzes. Several Italian regions lay claim to the origins, and the proportions and ingredients differ from area to area. We like how the Venetians stick to Aperol and Prosecco.

Crab Crostini

Makes a very large tray of crostini

  • 1 thin baguette, cut into thin slices, toasted
  • 500g/1.1lbs spanner crab meat
  • Kewpie mayonnaise (amount depending on how creamy you like it)
  • Finely grated zest of 1 small lemon
  • 4 tablespoons finely chopped chives
  • Salt and pepper to taste

Step 1 - Mix the spanner crab mixture with as much mayonnaise as you like (start with 2-3 tablespoons and taste from there), lemon zest, chives and salt and pepper.

2. The Pimmlet


  • 25ml Pimm's No.1
  • 25ml Gordon&rsquos Gin
  • 25ml fresh lime juice
  • Dash of sugar syrup
  • Cucumber and mint to garnish

Muddle cucumber, mint leaves, and sugar syrup in a cocktail shaker, fill with ice and then shake for a minute. Strain into a chilled martini glass and garnish with cucumber and mint.

In a tall glass filled with ice cubes, pour the Pimm's.

Garnish with the cucumber and any combination of mint, orange, and strawberries that you like. Serve and enjoy.

Is There a Difference Between English Lemonade and American Lemonade?

Lemonade is not the same beverage everywhere in the world. In Britain and some other countries, "lemonade" refers to a carbonated, clear drink flavored with lemons. It is not as sweet or tart as the typical lemonade made in America from lemon juice, sugar, and water. By many accounts, English lemonade is most similar to lemon-lime sodas in the U.S. For a better substitute than the syrupy big-name commercial brands, look for lemon-flavored soda from boutique soda makers.

Recipe Variations

The Pimm's cup is just as refreshing when made with still lemonade. Or, as an alternative to soda, you can give the drink a little fizz in a number of ways:

  • Use a store-bought sparkling lemonade or carbonate still lemonade using a soda machine.
  • While mixing fresh-squeezed lemonade, use sparkling water (seltzer or club soda) to replace all or a portion (about half) of the lemonade's water. Only go this route if you'll drink all of the lemonade before it goes flat.
  • Add a splash of sparkling water or any clear soda to the drink in the glass. Even tonic water will do because the original Pimm's No. 1 is reported to have included quinine.
  • Make a Pimm's Rangoon by topping the drink off with ginger ale (some people enjoy the snappy spice of ginger beer).
  • For a Pimm's Royal, top the drink with Champagne.

How Strong Is the Pimm's Cup?

The Pimm's cup is not a strong drink. In fact, it's quite light and has an alcohol content right around 6 percent ABV (12 proof). That's about the same as the average beer, so feel free to have a second round.

When Was Pimm's Created?

The Pimm's story began in 1840 with James Pimm at his Oyster Bar in London. As was customary at the time, he created his own liqueurs and called each of his secret recipes a "house cup." Rather than giving each liqueur a unique name, Pimm numbered the cups, and they quickly became famous. Pimm sold the bar to Sir Horatio David Davies in 1870, and before the turn of the century, the liqueurs were bottled and sold outside the bar. The brand was purchased by Diageo in 1969 and remains in the liquor company's portfolio.

What Kind of Liquor Is Pimm's?

Pimm's is the familiar name for a liqueur that was formally known as Pimm's Cup No. 1 (the company has dropped "Cup" from the name). It is a gin-based liqueur with a deep red color that is flavored with herbal botanicals, spices, and caramelized orange. The exact ingredients are proprietary and strictly guarded by the brand. It is bottled at 25 percent ABV (50 proof). Pimm's is a digestif and enjoyable when drunk straight after a meal, though the lemonade mix is the preferred way to serve this liqueur.

What Were the Other Pimm's Liqueurs?

Over the years, there have been a total of six bottled Pimm's recipes. Each began with a different base liquor and used various herbs, fruits, and spices to create unique flavors. Pimm's fell out of the limelight around the 1970s and dramatic changes have been made to the brand's portfolio. Today, The Pimm's Company produces only the gin and vodka liqueurs (and occasionally the brandy).
