Make coffee and leave to cool. Beat the yolks with the powdered sugar until it becomes a frothy cream, and then add the mascarpone. Whip the cream, and add the cream obtained over it. After the coffee has cooled, add the cognac.

For assembly: put a layer of biscuits soaked in the coffee mixture in a tray, and then a generous layer of cream.

You can put as many layers as you want, depending on how high you want the cake to be
