Recipe Summary

  • 1 (5 pound) bone-in beef pot roast

  • 8 ounces sliced mushrooms
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1 ½ tablespoons all-purpose flour
  • 1 tablespoon tomato paste
  • 2 ½ cups chicken broth
  • 3 medium carrots, cut into chunks
  • 2 stalks celery, cut into chunks
  • 1 sprig fresh rosemary
  • 2 sprigs fresh thyme

Generously season both sides of roast with salt and pepper. Sprinkle flour over the top until well coated, and pat it into the meat. Shake off any excess.

Heat vegetable oil in a large skillet over medium-high heat until hot. Sear the roast on both sides for 5-6 minutes each, until well browned. Remove from the skillet and set aside.

Reduce the heat to medium and stir in mushrooms and butter cook for 3-4 minutes.

Stir in onion cook for 5 minutes, until onions are translucent and begin to brown. Add garlic, stir for about a minute.

Stir in 1 1/2 tablespoons flour cook and stir for about 1 minute. Add tomato paste, and cook for another minute.

Slowly add chicken stock, stir to combine, and return to a simmer. Remove skillet from the heat.

Place carrots and celery in the slow cooker. Place roast over the vegetables and pour in any accumulated juices. Add rosemary and thyme.

Pour onion and mushroom mixture over the top of the roast. Cover slow cooker, turn to high and cook the roast for 5-6 hours, until the meat is fork tender.

Skim off any fat from the surface and remove the bones. Season with salt and pepper to taste.

Don't be surprised if your next-door neighbors come knocking on the door after getting a whiff of your Slow Cooker Country Pot Roast. The smell of this tender beef roast cooking up in your slow cooker all day is enough to get everyone rushing to your dinner table!

What You'll Need

  • 1 (3- to 3-1/2-pound) chuck roast
  • 2 teaspoons salt
  • 1 / 2 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 large onion, coarsely chopped
  • 2 tablespoons tomato paste
  • 1 / 2 cup water, divided
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons chopped fresh rosemary
  • 3 cloves garlic, chopped
  • 3 tablespoons all-purpose flour

What to Do

  1. Sprinkle roast with salt and pepper on all sides. In a large skillet over high heat, heat oil brown roast on all sides.
  2. Place onions in a slow cooker place roast over onions.
  3. In a medium bowl, mix tomato paste, 1/4 cup water, Worcestershire sauce, rosemary, and garlic pour over roast.
  4. Cover and cook on HIGH 6 to 7 hours or on LOW 8 to 10 hours or until meat is very tender. Remove meat to a platter cover and keep warm.
  5. In a small bowl, whisk remaining water into flour until smooth. Whisk flour mixture into onions and sauce in slow cooker until thickened. Serve onion gravy over roast.

Love these slow cooker recipes. They get the meat so tender which helps my husband eat it with his dentures. Have recently discovered the addition of tomato paste to lots of recipes deepens the overall flavor of the dish. Have not yet used it on a pot roast but will be making this soon. And the onion gravy sounds wonderful.

This is a regular on my recipe rotation. If I need something easier then I put the large chopped vegetables on the top like carrots and potatoes but if I have more time then I'll make mashed potatoes and gravy. And sometimes I compromise and make red skin smashed potatoes.

Made for a small get together, it was a hit ! Can't wait to make it again, another addition to my go to recipes !!

I would like to add carrots and chunks of potatoes to the Slow Cooker. At what point would be the best time to do this? Thank you! This makes my mouth 'water' just reading about it! )

If your carrots and potatoes are cut into 2-inch chunks or larger, then add them at the beginning of cook time. If they are cut into 1-inch chunks, then you should add them to the slow cooker 3 hours before end of cooking time.

I see a large onion, chopped, as the fifth ingredient.

Very, very good. Followed the recipe almost exactly, the only difference was that I did not add the tomato paste but did add everything else the recipe called for. Instead of the tomato paste, I added an envelope of onion gravy mix and about a cup of water. I did have to add the flour and water mixture at the end of the cooking time to add a bit more thickness to the gravy. The roast and gravy turned out excellently!

Is 1/4 cup of water basically all the moister you add to this roast?

Yes, you only need 1/4 cup of water because when you use a slow cooker covered, the steam increases the liquid in any recipe. Enjoy!

the tomato paste really enhanced the flavor combination. made gravy by adding 2 cups beef broth, my family HAS GOT TO HAVE NOODLES with rst beef along with mashed potatoes. again, super flavor!!

Ingredients

  • 3 to 4-pound chuck pot roast
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 to 4 medium potatoes, quartered
  • 3 to 4 carrots, cut into 2-inch pieces
  • 2 medium onions, quartered
  • 1/2 cup beef broth

Instructions

  1. Sprinkle roast with salt and pepper.
  2. Place half of vegetables in bottom of slow cooker crock, top with roast, then add remaining vegetables and liquid.
  3. Cover and cook 5 hours on HIGH or 8 hours on LOW.

Half of a 1 lb. bag of baby carrots can be used instead of 3-4 medium carrots. A long cooking time in moist heat will tenderize a tougher cut of meat. Therefore, using a lower-priced cut, such as chuck, is economical as well as delicious.


Undercooked pot roast will be tough and chewy. Allow your roast to cook longer, however, be sure to keep an eye on the liquid, if the liquid dries out it can lead to dry meat.

  • Bottom round or Top round. These cuts are leaner and less tender than a chuck roast but the long slow cooking process in this recipe makes them &lsquofork-tender&rsquo.

Other flavor variations:

-Make Mississippi pot roast sandwiches with this shredded beef and your favorite toppings like lettuce, cheese, coleslaw e.t.c. Use high quality thick bread so it doesn’t tear easily when eating.

-To make Mississippi pot roast with vegetables, add potatoes or carrots halfway through cooking.

-You can also make this roast with pork or chicken but it won’t be the original Mississippi roast recipe.
