These are a favourite in our family. Mushrooms are stuffed with a rich crab meat filling, topped with breadcrumbs and baked.

  • 60 mushrooms, wiped clean
  • 1 lemon, juiced
  • 1L water
  • 85g chopped onions
  • 60g chopped celery
  • 1 tablespoon soured cream
  • 120g cream cheese, softened
  • 2 tablespoons dry breadcrumbs
  • 1 teaspoon lemon juice
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 100g crab meat
  • 2 tablespoons paprika

  1. Preheat oven to 180 C / Gas 4.
  2. Place mushroom caps in a large bowl. Cover with lemon juice.
  3. In a medium saucepan, boil the water. Pour the water over the mushroom caps. Drain after 1 minute and pat dry.
  4. Using a blender or food processor, thoroughly blend the onions, celery, soured cream, cream cheese, breadcrumbs, lemon juice, garlic powder and salt. Transfer the mixture to a medium bowl and gently mix in the crab meat by hand.
  5. Fill the mushroom caps with the blended mixture. Top each cap with a dash of paprika.
  6. Bake in the preheated oven 7 to 10 minutes, until lightly brown.

Crab Stuffed Mushrooms Recipe

Serves: 4 | Prep time: 20 mins. | Cook time: 15 mins.

Ingredients

1 lb. lump crab meat (I prefer king crab)
1 cup white wine, I use chardonnay
1 egg
6-8 Large portabella mushroom caps (sometimes called portabella sliders)
3/4 cup cream cheese, room temperature
1/2 cup Parmesan cheese (plus 6-8 pinches for the mushroom caps)
1/2 cup scallions, finely chopped
1/2 cup Italian flat leaf parsley, finely chopped
1/4 cup shallot, finely chopped
1/2 stick butter, (plus 6-8 pads for the mushroom caps)
3/4 cup garlic bread crumbs
3 tsp Old Bay (plus 6-8 pitches for the mushroom caps)
1 tsp freshly chopped tarragon
½ tsp savory powder

Step-by-Step

Step 1: Light grill or oven set up for indirect heat, establish temperature at 350°F. I use a grill for this recipe because I’m normally serving them as an appetizer with a steak, or roasted street corn so it just makes sense to keep the grill rolling. These can also be done indoors in your oven. I just try to take every opportunity that I can to get outside and be around a flame and I encourage you to as well.

Step 2: In a small sauté pan, melt 1/4 stick of butter over medium heat, add shallot and sauté for 3 minutes.

Step 3: Add chopped tarragon and sauté an additional 2 minutes. The hint of licorice flavor coming from the tarragon really compliments the old bay seasoning. Seriously, once you try tarragon in these or in a traditional crab cake you won’t make them without it – ever again.

Step 4: Deglaze with 1 cup white wine and reduce for 1 minute. Pour liquid into mixing bowl and set aside to cool for 10 minutes.

Step 5: Unwrap and clean off mushrooms by lightly dusting them with a paper towel.

Step 6: Using a small spoon, scoop out stem and underside of the mushroom caps, creating small bowls for the crab dip. Discard stems.

Step 7: Put caps in cast iron skillet and place a pad of butter in each cap.

Step 8: In a medium sized mixing bowl, combine remaining stuffing ingredients with sautéed shallots and mix. Once combined, gently fold in lump crab meat. You’ll want to break the larger lumps up slightly, but not overly so. It should look like this once folded in:

Step 9: Using a spoon—or have some fun and use your hands—place a large scoop of mixture into each mushroom cap. Top each with a mound of crab, a pinch of Parmesan cheese, and a dash of Old Bay (optional).

Step 10: Place cast iron pan on grill, close lid and let cook for 15 minutes. Remove from heat and serve immediately.

Tips to making crab stuffed mushroom appetizers

Concerned about timing? Then start making stuffed mushrooms the day before the party!

Prepare the mushrooms (the peeling of the outer skin) and vegetable/crab stuffing the day before the party.

Crab Stuffed Mushrooms Recipe As An Appetizer Or Entree

Served as an appetizer or entree, these crab stuffed mushrooms are a rich and elegant addition to the table. Portobellos have a deep, rich flavor in a lovely contrast to the sweetness of crab and the tang of the cheese. If you are unable to find portobellos, other large mushroom caps will also work.

You’ll notice in the photo that I’ve used both large (mine were 6 inches in diameter) portobello mushrooms as well as large white common or cremini mushrooms. The crab mixture may also be used to fry up as crabcakes.

Crab Stuffed Mushrooms Recipe

In a large bowl, combine crab, sweet onion, parsley, garlic powder, mustard powder, salt, pepper, lemon juice, Worcestershire sauce, mayonnaise, heavy cream, stuffing crumbs, 1 cup of the shredded cheese, and 1/4 cup of the Parmesan cheese using a large fork. Try not to break up the crabmeat chunks.

(At this point, the crab stuffing mixture may be refrigerated overnight before stuffing the mushrooms to bake.)

Preheat oven to 400 F. Select a shallow baking pan large enough to hold portobellos and line it with nonstick foil. (Alternatively, coat a glass casserole dish with vegetable spray.)

Brush portobello mushrooms clean. Remove the stem. Scrape out the dark gills with a large spoon. Rub olive oil over the tops of the portobello mushroom caps, invert them, and place gill-side up in the baking pan. Mound crab mixture into the caps. Top stuffing with remaining 1/2 cup shredded cheese and 1/4 cup Parmesan cheese. Sprinkle lightly with paprika. Carefully pour the wine down the side of the baking pan.

Bake 25 to 30 minutes, until golden on top and mushrooms are cooked through.

Yield: 8 generous servings

Notes:
• Large common white (cremini) mushrooms or other large mushroom caps will also work, but reduce cooking time accordingly. The crab mixture may also be used to fry up as crabcakes, but you will need to add 2 beaten eggs as a binder.

• I like to reserve the mushroom stems, trim, and chop them to add to the crab stuffing mix.


You can even freeze these prepared crab stuffed mushrooms so you can always have them available when you want a delicious appetizer! Simply place the prepared mushrooms in the freeze for a few hours to harden. Once they have hardened, place them in an airtight container or heavy duty ziplock bag to store.

When you are ready to bake these Crab Stuffed Mushrooms, place them on a baking sheet directed in the recipe and bake accordingly to the recipe. Be sure to bake for an additional 10 minutes-15 minutes depending on the size of your mushrooms.


Preheat the oven to 375 degrees F.

Pop the stems out of the mushrooms and scrape out the inner gills with a spoon or tip of a paring knife. Place the mushroom caps stem-side-up on a baking sheet.

Stir the crab, breadcrumbs, scallions, parsley, salt and pepper together in a bowl. Stir in the milk until the filling is moistened.

Scoop the crab filling into the mushrooms, dividing it evenly between the open caps. Bake for about 15 minutes, until the filling is browned and golden on top.

Let the mushrooms rest while you make the sauce: Melt the butter in a saucepan over low heat. Whisk the lemon juice and cornstarch in a small bowl, then whisk into the melted butter. Continue to whisk until the sauce comes together.

Combine crabmeat, egg and bread crumbs in a large bowl, stirring well. Add mushroom mixture and 2 tablespoons cheese, stirring well. Spoon, filling evenly, into mushroom caps sprinkle with remaining cheese. Bake at 350° for 20 minutes or until golden.
